Unfortunately, these seem to be currently bugged. I just killed my first shark after obtaining my artifact, and the shark dropped the +5 Fishing version instead. I've put in a ticket to see if this is a known issue.

If you get the killing blow on the shark with the Underlight Angler equipped, he will drop Seabottom Squid.

Maybe you have to do the whole fight with the Underlight Angler equipped.
Suggest hearthing to Dalaran when you get the shark, drop it and get the first tag. Others will probably join in and help kill it. If you do it near the hearth point, the guards will also help kill it.

The rare fish (from the achievement: Bigger Fish to Fry) all give 50 artifact power once you throw them back in the water. You must have your fishing pole equipped and click on the pearl at the Dalaran fountain in order to view your artifact power as well as spend your artifact power. Only the rare fish you catch AFTER obtaining the fishing rod will give you artifact power. The tooltip should update to reflect that you'll get artifact gains AND fishing skill level vs just fishing skill level.

Killed the shark with Les Régicides, looted it with Les Régicides equipped -> 8x +5 fishing skill version
Killed the shark with Les Régicides, looted it with Pêcheur de Terradiance equipped -> 9x +5 fishing skill version
Killed and looted shark with Pêcheur de Terradiance equipped -> 1x 50 Artifact Power version.

Just in case anyone was wondering.

If you save up all the rare fish you collected while trying to get your Pêcheur de Terradiance, like me, don't it won't work. The text is not changed once you get the Pêcheur de Terradiance.

It still says:

Use: Toss the fish back into the water, increasing Fishing skill by 5, up to a max of 800.

Only new rare fish will say:

Use: Toss the fish back into the water, granting 50 Artifact Power to your fishing artifact.

After 25+ Pools I finally got the squid East Of Cove of Nashal, I went back and forth aiming for pools only with Bright Baubles, Arcane Lure, and of course a fishing rod. I avoided mobs by getting revered with the anglers in Pandaria (I exchanged my time walking badges with reputation tokens.) and Elixir of Water-Walking. Cheers and Happy hunting i hope this helps <3
