ok, for those early in shadowlands, I found a good place in Bastion is at 55, 77 while on the "suggested reading" quest
the etherwyrms spawn quickly are easy to kill and are in a tight group.

I've found the best place to farm leather is Hall of Beasts in Bastion. The Etherwyrms respawn crazy fast and drop lots of greens and wings that you can auction.

If you need some leather, look for the Bastion world quest La pénurie. When it is up, there's a ton of people killing etherwyrms that are skinnable. In about 45 minutes, I got ~700 desolate leather, 50 callous hides, 165 bones, 16 heavy desolate and 6 heavy callous hide.

edit: This WQ is in the Bastion free-for-all WPVP area. Everyone is red, even your own faction. You're going to get ganked occasionally, but that's life in PVP.

Since everyone is choosing Bastion as their farming spot, I decided to look for other spots to farm. All of the Bastion spots everyone has talked about here are always packed on my realm.

I found Dusty Burrows in Ardenweald to be quite decent. It's right next to the Tirna Vaal flight path. The Gorms respawn rates are great, rotation is straight forward (just go around in a circle) and not as many people farming the area (at least on my realm.) There's also Withering Ardenmoths and Gorged Decayfly you can aggro in the air as well for extra mobs. Also, I wouldn't worry about the Wild Gormlings, they skin for trash related items. Around <20 minutes in I got around 300+ Desolate Leather, 7 Heavy Desolate Leather, 2 Heavy Callous Hide and 16 Callous Hide.

I second the comment mentioning the gorm hives in Ardenweald, but FWIW in Maldraxxus if the WQ Œil pour œil is active, every hauler that falls is skinnable and it doesn't matter if you shot it down or not. If no one else needing leather is around it's a super easy way to harvest a lot in a short time. Bonus points: most of the mobs in the area are yellow so you don't have too much to worry about in the realm of fighting things off.

The best place so far - only 5 Shimmering Etherwyrm but they respawn so fast that i wasnt killing because i paused to drink coffee

Its a quest place - just bare this in mind when other players show up :)

So if you're going back for shadowlands profession completion.

The etherworms in other comments can be annoying to pull and find yourself waiting a lot for few kills, as fast as they may be, I prefer the larions around /way 46, 37
there are a lot more of them, you can chain pull lots of them, and they respawn quick enough for a full loop. This was my secret spot that no one else went to to get thousands of leather in minutes.

Also you might as well do Ailes brisées found nearby at /way 42.82, 42.72
Since that quest involves killing these larions a lot.
(it ends with Libellume serviable and Libellumes capturées)

/way 56.53, 43.24 in Ardenweald worked really well for me. Runestags and Juvenile Runedeer dropped a lot of Desolate Leather (Juvenile Runedeer seem to drop 3 every time, or at least a high chance of 3 for each), as well as Pallid Bones and Callous Hide
