I played the test last weekend, and I could skin mobs with the Skinning Knife in my bag, not equiped, although the knife, at level 5 had better stats than the weapon I had XD
Some items are required for quests. I remember changing to herbalism because one herb was so expensive in the AH and I needed to level a rep via turn ins.
Alchemy is never useless.
I just won't have the time to grind a thousand consumables to do a raid. Closing in on 40 and am not able to skip work and game. All the power to you...you...classicist
Pip's Skinner also increases Skinning skill and is available from Phase 1 while Zulian Slicer is not obtainable till Zul'Gurub goes live.
There are some tailoring recipes that have a special bonus for tailors at 300, I am pretty sure. The Bloodvine 3-piece set gives 300 level tailors 2% crit chance. But there are a lot of other pieces with more stats, so I am not sure that is much of a bonus for all cloth wearers :D

Professions will revert to meaning something to the individual character, rather than be about how much Gold that character can amass... yes; some will be 'money spinners' for power levellers (those hell bent on getting to L60 in "2 seconds flat"), but if your pricing isn't realistic, nothing you farm will sell.
